Avocado & Tomatoes

Ingredients;
2 ripe avocado, sliced
1 medium tomato, sliced
Sea salt and pepper to taste
A drizzle of extra virgin olive oil
The juice of 1 fresh squeezed lime.
Place sliced and peeled avocado and sliced tomatoes on a plate.  Add salt and pepper. Drizzle olive oil over the plate.  Squeeze with fresh lime juice and mix together gently.
serves 2.

3 Tips For Shopping At The Farmer's Market

 Farmers markets offer the freshest fruits and vegetables of the year right now.
Here's 3 great tips if your going to visit the market.
1) When looking for the freshest summer squash, zucchini or cucumber, make sure you choose those that are very firm and avoid the ones that slightly bend.
2) Now is the best time to try a large variety of fresh fruits and veggies, so be adventurous and  try different foods.
3) It's best to go to the market an hour or less before they close. This is when most vendors lower their prices to at least half  of what they were charging in the beginning of the day.

Whole Grain Pasta With Lime Juice and Fresh Cilantro

Ingredients;
1pkg whole grain pasta
3 Tbs extra virgin olive oil
2 large cloves of garlic minced
2 and 1/2 tbs lime juice (squeezed fresh)
4 tbs fresh cilantro chopped
1 half small chopped and seeded jalapeno pepper
Sea salt and pepper to taste

Prepare pasta as it states on back of package. Meanwhile put olive oil and garlic in a pan heat over medium high heat for 1 minute. Set aside. When pasta is done, drain and toss in with olive oil and garlic . Add all the rest of the ingredients, and cook for about 5 minutes stiring and tossing often.
Once finished remove from heat and add a bit more fresh cilantro to the pasta. Serve with a side of sliced fresh lime for exrta lime juice.

WATERMELON

The dog days of summer are now here. The perfect fruit to eat on sticky days is watermelon. Not only does watermelon hydrate the body, it's also a great source of vitamin A and packed with vitamin C.

Garden Fresh Meatless Sauce


Now that tomatoes are coming into season, skip the meat and eat vegetarian some nights. Not only is it healthier, but eating much lighter meals in the summer helps us tolerate the heat better.
Here's a fast simple recipe, for fresh meatless sauce.
Ingredients;
3 tbs extra virgin olive oil
3 chopped garlic cloves
1 medium onion
6 fresh ttomatoes ( preferably picked out of a garden, bought from a garden stand or farmer's market, because they are fresh and tastier than store bought tomatoes)
1/2 cup freshly chopped basil
Sea salt and pepper to taste
1 pinch of crushed red pepper
In a large sauce pan heat olive oil.  Add the onions and saute until soft. Add chopped garlic and saute a minute more.
Add chopped tomatoes and the rest of the ingredients and cook over medium heat for 30 minutes.
Serve over pasta.
