Soy Ravioli with Olive Oil & Fresh Garden Vegetables

1 pkg frozen Soy Boy soy ravioli (or cheese ravioli)
1 chopped zucchini
6 baby portabella mushrooms, sliced
1 chopped tomato
4 medium cloves of garlic, minced
3 tbs olive oil
1 tbs of  fresh parsley
1 tbs fresh thyme
1tbs fresh rosemary
Sea salt and pepper to taste
1 cup of fresh baby spinage
1 cup fresh arugula
Boil ravioli as directed on the package.
in a medium frying pan pour olive oil and add garlic, mushrooms, tomato, spices salt and pepper and zucchini. cover cook on medium heat until tender. after cooking the vegetables for 25 minutes or once they are tender, add the spinage and arugula. cook for about 4 minutes longer then mix with ravioli and serve.

    The photo which you had already posted once and have placed on permanently now, makes me smile: the brave cat running along that line of police dogs, it sure needs courage !

    The Ravioli are good prepared like this. I had some yesterday before work last night.
    I love that kitty pic. I can't get enough of it!
    She sure is brave even walking alone in the middle of the police dogs!
    Your right this kitty does have courage.
