Beet Green Sandwich

This summer I'll be planting three different varieties of beets. I'm so excited to get started out there.
Beets are a great source of vitamin C, B's and fiber. They're great either roasted or added to salads.
I also eat the greens of the beets. They're very tasty and very nutritious.
There's this delicious beet green sandwich that I've been making on lazy dinner nights, when I just want to throw something fast together.
For those of you interested in trying this easy beet green sandwich, I've listed to recipe below.
Ingredients;
1 bunch of beet greens cut and rinsed.
2 medium cloves of minced garlic
1 or more tbs olive oil
Sea salt and black pepper to taste
Whole grain bun
Pour olive oil into a medium frying pan. Add the greens to the pan and saute over medium heat. After 5 minutes of sauteing add the garlic and continue to saute until soft,wilted and fully cooked.
Once finished remove from the pan and season with sea salt and pepper.
Place on a toasted whole grain bun and top with either soy cheese, or dairy cheese.
This is quick, easy and very healthy. If you love greens this is surely worth a try!

    yes it was awful for a whole week I kept feeling really bad and then I decided to go to the doctor and she said " you have a bladder infection" hate those things they burn "(

    I too just got off of the antibiotic for bladder infection. I even went back for another test to see if the meds cleared it all. I should hear about it tommorrow. I hope you feel better now from your infection?

    I think you'll enjoy beet greens. I've even cooked them with kidney beans, garlic and olive oil, then mixed them in with brown rice. It tastes great both ways.

    I don't know about the greens - I'm sure they are tasty, but I love beets in a sandwich with Jarlsberg cheese!

    Lydia - I've had countless bladder infections over the years and I'm a firm believer that the "antibiotics" I used in the past only aggravated my condition. I only use 100 % organic cranberry juice now - with boiling water to make a hot drink and take acidophilus every day, avoiding all sugars until it clears up.

    It sounds good!
    Thanks for the advise on uti's. I get them often.
    When I was expecting my son, I had to stay on antibiotics for bladder infections through out the whole 9 months of my pregnancy. I also had to take meds for uti's when carrying my daughter.
    Some of us women are just prone to them. I'm jealous of the women who are lucky enough to never get them.
