Eating The Color Of The Rainbow

When choosing vegetables and fruits, eating the colors of the rainbow is the best choice for getting a variety of vitamins that we need daily to keep our bodies healthy.
Antioxidants tend to interfere with developing diseases by neutralizing free radicals. Look for fruits and vegetables that are rich in antioxidants, as well as vitamins C and E.
Apricots, asparagus, beets, carrots, squash, yams, and tomatoes all have high levels of carotenoids.
Citrus fruits such as broccoli, cantaloupe, kale, sweet peppers, and strawberries are all high in vitamin C. Regular consumption of vitamin C is know to reduce the duration of a cold.
Foods with high levels of E include almonds, peanut butter, salmon and sunflower seeds. Regular intake of foods containing vitamin E helps to keep our skin looking healthy.

Lemon Dill Asparugus

Ingredients;
1 bunch of fresh asparagus
The juice of one fresh lemon
Extra virgin olive oil
1 medium clove of garlic, chopped
Sea salt & pepper to taste
1 tsp dill weed (dried or fresh)
Wash and cut ends of asparagus. place in a steamer and steam until tender.
Once tender, remove vegetables from steamer and place in a flat serving dish.
Add the juice of 1 lemon, and drizzle olive oil over the top.
Add chopped garlic, dill and salt and pepper to taste. Toss and serve warm.

This is a very nice and light side to many main dishes.

Salad Greens

Lettuce is one of the first things we can plant in our vegetable gardens in the early spring.
Lettuce thrives in cooler soil and cool weather. Once it gets hot out, lettuce bolts quickly and wilts.
There are many different varieties of lettuce plants and seeds to choose from. They also do not take up much space in the garden.
Here are a few different choices of greens to choose from.
Mild;
Spinach
Young beet and chard leaves
Young Kale leaves
Bock choy
Miner's lettuce
Tatsoi

Hot and Spicy;
"Wrinkled Crinkled Crumpled" cress
"Tendergreen" mustard greens
"Red Giant" mustard greens

Bitter;
Radicchio
Curly endive
Frisee
Italian dandelion

Distinctive tastes;
Cilantro
Sorrel
Lemon thyme
Lemon basil
Mints
Chives
Parsley
Tarragon

Petals only (for sprinkling on top of salads);

Dark Chocolate

Cocoa is very rich in flavanals. Studies have shown that people with high blood levels of flavaniods have a lower risk of heart disease, lung cancer, prostate cancer, asthma and type 2 diabetes.
Pure cocoa powder has the highest amount of antioxidants, followed by dark chocolate, then milk chocolate.
Just one ounce of certain types of dark chocolate has more than twice the healthy antioxidants than that of red wine and other dark chocolates.
Dove Dark and Cocoa Via, both made by mars Inc., contain Cocoapro cocoa,a proprietary, specially processed cocoa with superhigh levels of flavanols- so high that Dove Dark is used in medical research.
Eating small amounts of dark chocolate is fine. Just make sure that you are already eating a overall healthy diet.

Honey is much sweeter than vinegar in all situations.
