Vegan Black Bean Chili

Here's another delicious low fat, vegetarian chili recipe for everyone.
Ingredients;
4 tbs olive oil
2 medium green peppers, chopped
1 large onion, chopped
2 stalks of celery, chopped
2 large carrots, chopped
4 large cloves of garlic, minced
One chopped chili pepper
1 tsp tabasco sauce
1 1/2 tsp sea salt
1 1/2 tsp cumin
1 1/2 tsp chili powder
1 tbs lemon juice
1 28 oz can of diced tomatoes
1/2 cup of water
4 cups of black beans, rinsed and drained

Heat oil in sauce pan. saute all the chopped vegetables, garlic and red chili pepper over medium heat until tender. Once tender add salt, cumin, and chili powder. saute a minute more, or until you start smelling the aroma of the spices. Add all the rest of the ingredients. Cover and simmer over medium heat for about 25 minutes. If desired top with cheddar soy cheese(or regular cheddar cheese), avocado slices and a pinch of fresh cilantro before serving.

  2. Thats sounds delicious. I watched a programme recently and the lady was a vegan, the food she made was very colourful and looked really appetising, partiularly a pureed vegetable tureen in 3 layers using carrots, cauliflower and peas. Each layer was a separate colour and looked really pretty when sliced X

    I'm happy your going to try this recipe. I'm sure you'll like it!
    It's a very spicy chili. I usually use two red chili peppers in my chili, but for many it may be too hot, so I just added one for this post.

    I wish we had a vegan cooking show here, but we don't! I think they don't show enough vegan recipies on the cooking shows they air!
    The dish your describing sounds sooooo good!
    Many people think that eating a vegan diet is bland. It's really not if the food is prepared right. When I was in my twenties, I was a vegetarian, but ate dairy too. I cut dairy in my early 30's because of the lactose and I never felt better!
    I enjoy the flavor of soy products better than dairy products. I don't miss dairy much at all, except for on a pizza.

  5. Hi Lydia, Thanks so much for your lovely comments as always. Im hoping this negative person has got fed up with me.....
    I used to be a vegetarian but Im sorry I do eat meat now (please dont be mad at me) I do really enjoy vegetables aswell though. I agree that there arent any cookery shows catered for vegetarians and vegans and if there was Im sure more people would try the recipes. The programme I watched was part of a half hour show where viewers held a dinner party in their own homes and a well known chef went along to talk to them about their menus. The lady in question did a beautiful frozen ice bowl and filled it with salad leaves and edible flowers. The tureen I mentioned earlier (she used tahini paste instead of eggs to thicken the pureed veg which was then cooked again in the oven) and she made a chocolate mousse completely dairy and egg free, flavoured with an orange liquer. She also made bread and served the food picnic style with homemade elderflower cordial. There were other foods which we didnt get to see her make. I would have been interested to watch a full programme with this lady cooking. The food looked fantastic and not at all bland. X

    I'm sure if she hasn't bugged off by now, she will soon. I know it's hard not to let negative people who are nasty get to you. It makes them more surprised when people stand up to their bullying like you did!
    WOW! She made some really nice dishes. Thank you for coming back and commenting again. I also want to thank you for telling me about some of the vegan dishes she made!
    I have nothing at all against meat eaters. As a matter of fact my hubby and both of my children are huge meat lovers, so I make meat dishes for them almost every night, while at the same time preparing myself vegetarian.
    All my friends are meat eaters too! Actually I'm the only vegetarian among those I know, everyone else I know is a meat eater.
    I feel bad when friends invite me and my hubby over for dinner, cause they try to accomodate me. I feel like I'm putting them out. I don't want to give them extra work, but they insist and are very nice about it.

  7. Hello Lydia you seem to be blessed with art even in your cooking. I love these recipes. I'm not a fan of dairy or red meat. The more recipes I see of yours the more I learn that I really don't need that other kind of food to live good thanks have a great day my friend.
