Guacamole


Now that the weather is finally getting warmer, light, quick and easy meals are popular at my house. With spring here and summer just around the bend my local grocery store always has great deals on avocados.
Below I've listed a great guacamole recipe. It's very quick and easy to make.
Ingredients;
2 tbs fresh lime juice
2 medium ripe avocado
3 large garlic cloves, minced
1/2 tsp of salt
1/2 tsp cumin
1/2 tsp chili powder
Black pepper and Cayenne pepper to taste
small amounts of: peeled, seeded and chopped finely cucumber, diced tomatoes and black olives.
Place lime juice in a bowl. Add avocado (cut it open and scoop it out of it's skin), and mash it with a fork. stir in the remaining ingredients. Cover and chill for two hours. Once chilled serve with your favorite salsa and tortilla chips.

  1. I love the taste of avocados and eat them often, mostly in winter. My favorite recipe is a spoonful of shrimp salad in the hollowed halves.

    Your guacamole recipe sounds delicious and easy to do. I will try it.

  3. Now that's what I'm talking about! I love guacamole and cumin and lime are my favorite ingredients. You have to be careful with the cumin though, or it will take over. he he.

  5. Hey you! I'm trying this tomorrow. I just bought a bunch of avocados today and your recipe sounds wonderful. And yes, I agree guacamole on a sandwich is insane! :)

    Guess what I also grabbed at the market today? 3 mangos for 99 cents. It's mango season!!! We love mangos and can't seem to eat enough when they're plentiful.

    Fresh lettuce from our garden.
    Not yet.
    In june I hope we can begin to eat what we are going to plant in our garden.
    Well, the rhubarb I guess we can eat in may.

  15. Lydia, I love, love, love Guacamole! I make it all the time and it's very well received. Avocadoes are fun to work with and delicious to eat. I have a ripe one in the house right now and thanks to you, I'm going to make some "guac" tomorrow.

    I also like it in a salad with mandarin oranges and toasted almonds and a nice vinaigrette. Now, I'm really hungry!
