Tofu Parsley Spread


Ingredients;
1/2 tub soft tofu, drained
Fresh squeezed juice from 1/2 lemon
Sea salt and black pepper to taste
1 clove garlic, chopped
3 or more tbs extra virgin olive oil
1/2 tsp dill
1 tbs fresh chopped parsley
Place everything in blender and blend until smooth.
chill for 30 min or more before serving.
Tastes great in sandwiches, on whole grain crackers, or as a vegetable dip.
