To make a tasty healthy quick dish from fresh garden tomatoes, stack sliced ripe tomatoes alternately with vegan mozarella cheese ( you can also use the dairy mozzarella). Drizzle with olive oil and garnish with arugula and fresh basil. Add salt and pepper to taste.

I haven't found any vegan cheese here. Not sure where to get them either. This sounds like something simple that I can make :-)
