Simple Summer Dish

To make a tasty healthy quick dish from fresh garden tomatoes, stack sliced ripe tomatoes alternately with vegan mozarella cheese ( you can also use the dairy mozzarella). Drizzle with olive oil and garnish with arugula and fresh basil. Add salt and pepper to taste.

      Your welcome! I hope you enjoy this dish! Your cherry tomatoes sound like they're doing great:). My tomato plants are getting big, but the tomatoes are still green. I planted 23 tomato plants this year. I look forward to eating and preserving them. Its almost time to harvest my garlic too.

  4. I haven't found any vegan cheese here. Not sure where to get them either. This sounds like something simple that I can make :-)
