4 large whole grain tortillas
Hummus
1 yellow pepper, sliced into strips
1 large cucumber, sliced into thick pieces
1/4 red onion, thinly sliced
1 cup mixed greens
8 sprigs fresh parsley
1 large ripe tomato, sliced into eight wedges
Place tortillas on clean work surface.
Spread hummus on tortillas and 1/4 amounts of peppers, cucumbers, onions, greens and parsley. Top each with tomato wedges.
Roll each tortilla around filling ingredients and serve immediately. Perfect for a healthy picnic lunch!

Planting Shasta Daisies For the Honeybees
Almost ready to transplant my shasta daisies from pots to my veggie garden. I started them from seed about a month ago and have about 30 plants. Perfect for attracting bees and other pollinators to the garden!

Simple Summer Dish
To make a tasty healthy quick dish from fresh garden tomatoes, stack sliced ripe tomatoes alternately with vegan mozarella cheese ( you can also use the dairy mozzarella). Drizzle with olive oil and garnish with arugula and fresh basil. Add salt and pepper to taste.

Summer's been so busy for me between my new job at the gym, my family and my veggie garden! I hope to get back to blogging more vegan recipes soon:)!
