Ingredients;
3 Roma tomatoes, seeded and coarsely chopped
1/2 small red onion, diced
1/4 of a small cantaloupe, seeded, peeled and diced
1/2 mango, peeled and diced
1/2 medium green pepper, seeded and diced
1 or 2 jalapeno peppers, seeded and diced
1 1/2 tbsp of fresh squeezed lime juice
1/2 cup of fresh chopped cilantro
1/4 tsp cumin
1/2 tsp salt
Tortilla chipsCoarsely chop tomatoes, onions, cantaloupe, mango, sweet pepper and jalapeno pepper. Once chopped place in a large bowl and add the rest of the ingredients. Toss well and cover. Chill for 6 hours before serving with your favorite tortilla chips.

ReplyDeleteCanteloupe is an interesting addition. I never would have thought to add it.
In my younger days, I really didn't like cilantro, but in the last couple of years it has really grown on me and I use it in many dishes. Mmmm!

ReplyDeleteI'm happy you like this recipe. Cilanro is so good and it's also easy to grow. The canteloupe adds a nice fresh flavor to this salsa dish.
